Sustainability in food professions. Situated teaching and training arrangements are expected to support the competences of valuation, organisation and system in company-based training.

Current Status and Objectives/ Purpose

Even though nutrition is a central issue of sustainable development, an absence of didactical teaching and training arrangements for knowledge-sharing of sustainability skills to trainees and training staff is conspicuous. In this context, it is important to determine to what extent the objective of the vocational training ‘Professional Decision-making and Responsibility’ is compatible with the approaches for the development of valuation-, organisation- and system-competences, in order to support and sustain the acquisition of competences with modern didactical approaches in vocational training in addition to teaching thematic aspects of sustainability. The ambition of the project ‘NachLEBEN’ is the development, operational testing, evaluation and distribution of sustainable-orientated, situated teaching and training arrangements for skilled occupation in the food industry. The individual dimensions of sustainability (ecological, social, economical) within the emerging teaching and learning arrangements are not considered isolated from one another but is regarded and implemented in its entirety. The trial occupations of the project involve: confectionery technologist, specialist in food technology, distiller and wine technologist.

Procedure:

The guiding principle of the teaching and learning arrangements is to manifest the sustainability concept in specific vocational areas of activity. For the achievement of objectives, situations are created and transferred into digital learning formats that are constituted close to reality, problem-based, authentic and complex. The teaching and learning arrangements will lead the trainees to design their own constructs (constructivist approach) and allow a dynamic interaction between doing and thinking, active action and reflection. Didactic fundamental principles provide the basis for a successful implementation: Skills orientation, condition- and activity orientation and the constructivist approach (situated learning).

Desired results, transfer and stabilization

During the project period, the affiliated partners will develop and operationally test sustainability-orientated teaching and learning arrangements together with the trial and network partners. On the one hand, different sustainability-orientated scenarios are implemented for trainees and on the other hand, further training opportunities on sustainability can be offered.
